BTW, or Bermondsey Tonic Water, hails from 214 Bermondsey, an old antiques shop come gin bar. They make both a syrup (the quinine comes from the bark of the cinchona tree), which is added to carbonated water for each cocktail as well as in ready-to-drink pre-carbonated bottles.
Hand-crafted to a traditional Victorian recipe, BTW uses naturally occurring Quinine from the bark of the Cinchona tree, as opposed to the synthetic substitute, giving it a golden hue.
BTW Syrup –
This undiluted syrup is left part filtered which, when lengthened with soda, provides a lovely G&T experience. Each bottle yields around 20 serves and to make the perfect BTW G&T, pour 25ml of the syrup, 50ml of gin and top with soda. Hey presto, an old school G&T, golden in colour and rich in flavour.
BTW Tonic Water –
More subtle in it's flavour, BTW has none of that over powering bitter sweetness associated with some high street tonics. The citric acid is prominent and gives a zing of it's own but the defining character of BTW is its rounded tone. Great for those who like a more mellow G&T.
Due to the use of Cinchona Bark which is naturally high in Quinine, BTW must be pre-chilled before serving
