Byrrh is aged in large barrels just as it was in the mid 19th century (it's produced in Thuir, French Catalonia). There is no added sugar - all the sweetness comes from the muscat base wine and mistelle used in production.
It is dark brown in colour with aromatic, powerful aromas of red wine, spice, berries and orange peel. Overall, Byrrh is a rich and full bodied fortified wine, but in a lightly bitter style making it closest in flavour to Dubonnet Rouge and neither a full-on "bitter" or a sweet vermouth - it is perfectly poised somewhere in between.
Perfect for a classic Manhattan, but the ultimate summer serve is with tonic and some sliced strawberries.
NEGRONI ADVICE -
It's possible to use this as the Vermouth or the Bitters depending on what combination you surround it with. If used as the vermouth, try it with something bold like Pink Pepper Gin and if used as a substitute for Campari, opt for a drier vermouth in the mix otherwise it'll all be a little too sweet to satisfy that perfect Negroni balance.
