Four Pillars Distillery was one of the early gins to emerge from the Craft Gin boom in Australia. Kicking open the distillery doors back in 2013, the three-man team behind it, Stuart Gregor, Cameron Mackenzie and Matt Jones made their core objective clear from the very first minute: to create the best craft spirits that Australia has to offer.
Their core gin delivered all that and more, making them an international name in no time. Four Pillars is one of the go-to gins that our trusted army of bloggers and Gin nerds reach for, so if you're in a pinch and need a decent gin right this minute, head that way.
Four Pillars Spiced Negroni, however, is a more targeted affair. Designed in collaboration with Australian bartender Jason Williams, the gin was created specifically to rock a Negroni. Whilst the botanical line-up is very similar to that of Four Pillars’ flagship gin, the spices have been ramped up and cubeb has been added in to bring a peppery, floral kick.
Despite the sheer abundance of spices flooding this gin, there’s still a great deal or orange and a delicious green leafiness. At the start, anyway… that spice bomb comes and it sets your entire body ablaze, though the cubeb and star anise bring levity to proceedings. It’s actually completely delicious in a G&T despite its Negroni designs, especially as dilution calms the fire a bit.
To serve: Try it with orange in a G&T.
