Brookie's Byron Dry Gin - 70cl - 46% ABV

Pam and Martin Brook created their very own rainforest back in 2008. Thirty-five-thousand subtropical trees later, they found themselves with an abundance of botanicals and a very spirited idea. The ensuing gin, Brookies, is an Aussie showstopper, featuring 26 mad, brilliant botanicals from the land down under – 18 of which are from Byron Bay itself.

Despite the huge amount of ingredients at stake, this is a beautifully balanced drink, with a dry green spice complementing the kaffir lime tinge. A deep red fruit taste sits at the base, with sharp citrus and dusty pine running throughout. It’s complex and brilliant.
